
If you are counting those calories like I do, then this take on a low carb dinner is great for you. It's ideal for when you come home from a long work day and still want to maintain proper eating.
I know it's easier said than done but this meal can also be prepped from the day before and refrigerated, this way your healthy balance of protein and vegetables can be ready in under an hour.

Whatever method you choose, I'm sure you would not regret the taste of these protein wrapped in vegetables,smothered in lovely sauce goodness. 😄

Ingredients
- 2 - 2 1/2 pounds Flank steak - cut into 6 piece
- kosher salt/black pepper
- 1/2 cup Tamari sauce
- 2 cloves garlic - crushed
- 1 pound asparagus - trimmed
- 3 bell peppers - seeded and sliced thinly
- 1/4 cup balsamic vinegar
- 1/3 cup beef broth
- 2 tablespoons unsalted butter
- Olive oil spray
*this method requires 1 pack of toothpicks
- Marinade steak for approx. 1 hour or this can be done overnight (this can save time)
- Take the thinly sliced bell peppers and asparagus and place in the middle of each steak
- Carefully wrap the steak around the vegetables and use a toothpick to secure
- Lightly spray olive oil to the ends of the vegetables
- Preheat oven
- Place in baking tray
- Bake at 350 degrees for 20mins.
- Remove steak rolls from oven and allow to rest for 5mins before serving
- While the steak rolls are resting, over a medium heat, combine butter, balsamic vinegar, and broth
- Cook until sauce becomes thick and reduced to half. Add salt and pepper for taste
