Carrot Pineapple Cake

My first attempt at making carrot cake was a hit! This was no regular carrot cake guys trust me. I added a secret ingredient....shhh.....come closer.....it's.... pineapple....lots and lots of pineapple!😆🍍🍍

I am a bit of a pineapple freak and I like to add pineapples to everything, so it was not shocking that I searched for a carrot pineapple cake recipe. I wanted one with pineapple as an ingredient, even if one was not discovered, I would have created my own!

This pineapple carrot cake is very moist and bursting with spice flavour. To compliment these flavours, I generously applied with cream cheese frosting to the top and sides of the cake. I also love to add walnuts or pecans for that nice crunch element. This easy recipe comes together quickly and can be baked as a sheet cake, loaf cake or some cute cupcakes. Decorating is optional but this recipe requires no decorating.
